Home Made Vegetable Curry with rice



Today, I made a vegetable curry easy dish with rice. It is very easy and delicious. I encourage every one to cook this dish. It only takes 30mins.

Here's my ingredients: 
__________________________________________________________________________

☆1/2 Yellow Onion
☆1 Carrot 
☆1 Potato 
☆1/2 tbsp Salt 
☆1/2 golden curry mid-spicy

☆Cut Carrot and Potato to pieces
☆Place Potato into fresh cool water for 3-4mins,then pour away the water.
☆Cut 1/2 onion to slices.
☆Turn on your heat to high level, then add 1 tbsp vegetable oil to your pan.
☆Put onion fried for 3-4 mins.
☆Add carrot and potato, fried for 5mins, and cover the pan. change heat level to medium.
☆Use boiled water 1/3 cup, melt 1/2 golden curry bar.
☆Slowly add curry sauce to your pan, and make it cover your ingradients.
☆Cover the pan, and heat for 10-15mins with mid-low level.

Home Made Burger with sweet potato fries


♥ My prayers go out to all those injured in Boston Marathon ♥

Today,I made a burger with sweet potato fries. I wish I could make it better. The beef is well done, so it tasted a little dry. I used oven to bake sweet potato within 20mins, no extra oil needed. All process took me over 40 mins because I need to cook it with mid-low heat and watch beef carefully to avoid over heat.  In this point, I would prefer order burger from in-N-out. Anyway, it is another healthy dinner. I felt so happy that I discovered a new home dish. In next week, I will cook different flavor burger and write recipe next time.

Home Made Braised Prawns

Today, I made Braised Prawns, which is a famous Chinese cuisine. Braised Prawns is a popular dish in  Chinese family. I remember my grandfather used to cook it when I was little. It is so delicious and very easy to make. Most people like shrimp without shells. However, when we cook braised prawns, it is better for us to use prawns with shells. Because shell has organic fiber and calcium, it will protect nutrition during fried. Anyway, It is an optional. You can still use shelled prawn,which is perfectly fine.

Ingredients: 
_________________________________
☆ 1 lb prawns, deveined ☆
☆ 2 tsp white wine 
☆ 2 tsp vegetable oil 
☆ 3 cloves minced garlic 
☆ 1/2 green minced green onion 
☆ 2 tsp sugar 
☆ 1 tsp salt 
☆ 1 tsp soy source 
_________________________________
Cook Steps: 
☆ Play prawns in a bowl 
☆ Add white wine, minced garlic to the bowl 
☆ Marinated for  5-8mins 
☆ Heat pan for 1mins 
☆ Add vegetable oil to the pan and heat it for 30s 
☆ Add green onion, and fried 30s 
☆ Put prawns in the pan and quick fried until shell change its color, then cover the pan 
☆ Braised prawns for 1-2 mins (when you see shell complete change color to red)
☆ Add sugar, soy source and salt 
☆ Fried them all together 
☆ Place in a dish. It's done!

Hiking at Big Basin Redwood State Park


A hiking day. I went to big basin redwoods state park. It is far from where I live. I drove on mountain road very careful. Because of narrow roads, I don't think I can drive back after sun goes down. The park is huge. It has several trails. Some of them are very long. Most of trails may take you more than 3 hours. So, loop around redwoods is good for family visitor.


Headquarters Parking Lot & Loop Trail

Parking is $10 per car. You will get a park map and note. Write down which trail you are going on the note,then leave it on your car before enter. Because the trail is so long, I kept map on the hand all the time. Indeed,I am afraid of losing my way.

Big basin also a great camp place. I saw some groups came with camping baggages. The park store has rental place where you can get camping equipments or sleeping bags before 4pm. All in all, it was my  "new weekend adventure".

Maine Lobster Roll Night plus PSY's new song Gentleman music video


Saturday, a relaxing day. I was in Sam's Chowder House eating lobster roll. I don't know whether it has another place, which serve lobster roll in half moon bay. Sam's house is good enough for me. I saw thousands of people posted their views and pictures on yelp.I like the place not only because of delicious seafood, but also the nice seafront view. Maine lobster is expensive in California. There are not a lot of places serve fresh Maine lobster roll. I remember last year I ordered 2 lobster dishes in Maine restaurant with $24.99. Maybe next time I will buy a lobster and test-cook it by myself. 

Walked near beach and enjoyed a beautiful sunset tonight. Back to home, I watched PSY's new music video "Gentle man" on Youtube. I am not surprised that it already has over 10 million views. I believe it will become a next "magic song"!! I made a link. If you are interested in "Gangnam style", you probably like Gentle Man.

Home Made Mr Right - an egg pancake wrap fried rice

Friday, friday, everybody celebrates friday... A week is ending!!! Woke up in the morning, I made a simple fried rice and wrapped it with egg pancake. I call it : Mr Right. Because I think it doesn't look right. Something was missing. Maybe I forgot to make ears.Anyway, it is a fast breakfast.

Ingredients:
________________________________
☆ Cooked White Rice ☆
☆ 2 Egg ☆
☆ 1/2 Cup of flour ☆
☆ 1tsp Honey ☆
☆ 1tsp Sugar ☆
☆ 1tbsp Vegetable oil ☆
☆ 1/2 Green onion
_________________________________

1st Step: Making fried rice :
☆ Blend 1st egg in a bowl 
☆ Heat the pan
☆ Add vegetable oil into the pan
☆ After oil gets hot, add 1/2 green onion
☆ Fried onion in 30 seconds, and add cooked rice to the pan
☆ Fried about 8-10mins
☆ Add salt and place them in a dish

2nd Step: Making egg pan: 
☆ Place 1/2 cup of flour in the bowl.
☆ Add 1 egg and mix well with flour.
☆ Add 1tsp honey and 1 tsp sugar into the mixture.
☆ Heat the other pan, and place mixture on the pan.
☆ Heat for 1 mins,then turn it to the other side and heat another 60 seconds.
☆ It's done. Wrap it with fried rice.

I also made a cup of fresh mango juice with my new blender. "100% pure mango" I love it so much.

Home Made Japanese Rice Ball


Today, I made Japanese Rice ball with avocado, beef, and pickled radish. I bought rice ball making model in Japan town. It is a plastic one, but the shape is great.

Ingredients:
__________________________________________
☆ Cooked rice ☆
☆ Avocado cut to small pieces
☆ Marinated and cooked beef cut to small pieces
☆ Pickled radish cut to small pieces
☆ Sesame and Bonito flakes
__________________________________________



1. Cook rice use rice cooker.Menu choose "regular/sushi"
2. Mix cooked rice with 
_______________________________________

☆ 1tbsp rice vinegar ☆
☆ 1tsp sugar ☆
☆ 1/2 tsp salt ☆
_______________________________________

3. Place cooked rice inside of model and add small pieces of beef,avocado and radish in the middle. 
4. Use some rice cover on the top before squeeze the model.

☆ Cool rice down before you place it into plastic model ☆

Home Made Cookies - Wrapped


Home Made Bear Cookie. I put it into a gift package and wrapped to my friend. I made it with 40g organic sugar powder, around 50g butter and 200g organic all purpose flour this time.The final cookie taste a little over sweet. So,it's better to make a cup of coffee before eat. 

The weather is super nice today. Temperature is reaching a new high in this week. I love the warm place, but north california usually is very chilly. This afternoon, I heard Ice Cream Van play songs in our town. I haven't seen any ice cream truck came for a while. I FEEL SUMMER IS COMING!!

Home Made Pineapple Fried Rice


Sawadika!!! I caught a cold yesterday, so I didn't go to grocery. I decide to make pineapple fried rice today because it is easy to cook, and I already have all the ingredients I need. Cook Pineapple fried rice reminds me about Thailand.I miss my Thai friends. I hope one day I can visit them. I never been to Thailand. I heard it is a great place with lots of beautiful beaches. Recent, Thai drama becomes so popular in Asian. Star such like Mario Muarer has so many Facebook funs. I like the some romantic movies from Thailand, but not the horror movies.



Ingredients: 
__________________________________
☆ Sliced fresh pineapple
☆ Sliced 1/2 yellow onion 
☆ 1/2 lb shrimp 
☆ 1/2 lb cashew nut
☆ 2 egg 
☆ 3 cup of cooked rice
☆ 1 tbsp sugar
☆ 1/3 cup of apple juice
☆ 1 tbsp salt
☆ 1 tbsp soy sauce 
☆ 1/2 tbsp white wine
☆ 1/2 tbsp ginger 
☆ 2-3 piece of sweet basil opinion
☆ 3 tbsp oil
_______________________________________________________________________________

Cook: 

☆ Add white wine and ginger to Shrimp, marinate for 5-10mins.
☆ Add 1 tbsp oil to pan after it is heated put shrimp into pan.
☆ Fried until shrimp change color to pink, put them to a place.
☆ Use other pan cook egg until 2/3 well done.
☆ Use another pan or clear previous pan, put 1 tbsp vegetable oil to the pan.
☆ Add yellow onion and fried them until it turns to brown color.
☆ Put cooked rice into the pan and fried them all.
☆ Add shrimp, 1/2 tbsp salt, 1/3 cup of apple juice and 1/2 tbsp soy sauce. Fried them all.
☆ Finally add pineapple and cashew. Fried about 8 mins.

Home Made Japanese Ramen with BBQ Pork





I love Japanese ramen. There are several ramen places in bay area. One of the popular places is Ramen dojo. It has a small place in San Mateo downtown. People often come early before restaurant open. Most customers have to wait at least 30mins to be seated.  Even I like Ramen, I don't want to wait half an hour. So, I bought Japanese Ramen and made it at home yesterday. It was very delicious and healthy. 

The most important part is soup. I bought 1/lb baby pork rib and stew them in my slow cooker for 3hours and then mixed with Miso soup. 

Here's the ingredients: 
___________________________________________
☆ 1/2 Green Onion.
☆ 1/2 Package of Japanese Ramen (serve for 2)
☆ 1/lb Baby pork rib (cut into pieces) 
☆ 1 Boiled egg
☆ 1/3 Fish cake (cut to pieces)
☆ Black pepper
☆ 1/2 tbsp salt 
☆ 3 pieces of Garlic
☆ Corn
____________________________________________

Soup: 
☆ Cut baby pork rib to pieces. Use boiled water wash twice, then place them into a bowl.
☆ Add 1 tbsp soy source and 1 tbsp ginger to the bowl and mix well. Marinate for 30mins. 
☆ Place rib in to slow cooker.
☆ Stew pork rib with 2 cup of water for 3hours. Use slow cooker with high level program.
☆ Separate of pork and soup, then mixed soup with Miso. 
☆ Boil mixture for 10mins.

Ramen:

☆ Cook ramen in the other pan for 5mins. 
☆ Put them into soup. Add salt and black pepper.
☆ Add sliced egg and corn on the top.
____________________________________________

BBQ Pork: 

☆ Heat another pan. Add 1 tbsp oil to the pan wait for 2mins.
☆ Add 1tbsp soy sauce, 1 tbsp sugar to the pan.
☆ Add stewed pork rib to the pan and fried them for 2 mins.
☆ Place on the top of your Ramen.

Muay Thai Kickboxing - a combat sport from the Muay marital arts of Thailand. Last night I went to seventh annual Stanford's Burnham Brawl. The crowd kept roaring as the fighters put on a spectacular show of skill and strength. I thought kickboxing was a boy's sport until I saw two girls fight on stage last night. It moved the battle to its climax.

Home Made Pizza with self-made Pizza dough


    
I like to eat pizza in BJ's and Costco, but sometimes I feel the pizza is too salty. Therefore, I decide to make pizza by myself. Home made pizza is cheaper and fresher. I can control the flavor and add any thing I want.




Here's the recipe to make the pizza dough: 
____________________________________________

☆4 cups all purpose flour
☆1 1/4 cups of luke warm water
☆1 packet active dry yeast or 2 1/4 tsp active dry yeast
☆1 tsp salt
☆1 tsp sugar 
☆1/4 cup milk or less than 1/4 cup.

✎Mix them well in a bowl. Wrap the bowl and wait 30 mins until flour awake.

Ingredients:

☆ 1/2  Zucchini
☆ 1/2  Red and Green Pepper
☆ 1/2  Package of sliced mushroom
☆ 1/2  Package of pepperoni 
☆ 1/4  Yellow onion 
☆ 1/2  Can of Pizza Sauce
☆ 2tbsp olive oil

✎ Pre-Heat Oven with 400F Bake it for 18-20mins.
✎ Use Pizza Cutter cut pizza into 8 pieces and ready to serve.

Home Made California Sushi Roll




I am sure you can find lots of sushi recipes on internet. Even Sushi is easy to make, you need to have fresh ingredients and high quality of white rice. Cook California roll took me about 1.5 hour. If you already have cooked rice, you may only need 20-30mins to finish it.

☆ Use rice-cooker cook 1.5cup of rice.

☆ Add 2tbsp rice vinegar, 2tsp sugar, 2/3 tsp salt to rice, and combine them.

☆ Peel 1 avocado and cut it into strips.

☆ Cover bamboo sushi roll mat with plastic wrap. It is important step. Because the rice is too sticky, it may hard to roll them without wrap the bamboo sushi roll.

☆ Spread sushi rice on nori sheet using your finger tips. Sprinkle sesame seeds over the sushi rice and turn it over. Make nori sheet face to you.

☆ Place avocado and imitation crab sticks lengthwise on the nori sheet.

☆ Roll the bamboo mat forward, and hold the line of ingredients firmly.Make sure all the ingredients are in the roll.

☆ Use plastic wrap cover sushi roll

☆ Use a moistened knife cut roll to 6 pieces. (Regular knife also fine,but need cut with speed)

☆ Place them to plate, and ready to serve.

Home Made Beijing Cuisine - Jiang Bao Chicken

Famous dish but less people know of it - Jiang Bao Chicken. A traditional Beijing cuisine.

Ingredients:

☆ 1/2 red and 1/2 green pepper
☆ Spicy red pepper 2 pieces.
☆ Green onion 1 pieces.
☆ Chicken breast 200g. Marinated with 1/4 tbsp white wine +25g ginger for 30mins.
☆ Sichuan pepper 1/4 tbsp.
☆ 1/2 tbsp vegetable oil
☆ 1/2 tbsp soy source
☆ 1/4 tbsp dark soy source
PS: groundnut is optional

Jiang Bao Chicken can also cook with cucumber instead of red and green peppers. Some of friends don't like chinese dish with lots of oil. Neither do I. I try to make every dish as light as possible. In this cuisine, I used vegetable oil. Cook with light salt and right amount of soy source.

Japanese Fried Noodle -Yaki Udon.



I did some research on google before I cook Yaki Udon. Because it is a famous japanese dish, there are many recipes online. Some of them are very long. After read and collect some information, I made my first "japanese fried noodle" in an easy way. I found friend noodle sauce in Japanese Market. Some of Chinese groceries such like 99 ranch also have this type of sauce.

Entire process about 30 mins. Here is my ingredients: 

☆3 pieces of marinade beef. (0.25lbs);

☆2 package of Udon;

Yakisoba Sauce (80g); If you can't find the sauce in grocery store, you can make by self.

☆1/2 carrot, 1/2 green pepper, 1/2 red pepper;

☆1/2 yellow onion;

☆1tbsp vegetable oil;

1. Vegetable 
Heat up cook pan for 1-2mins - add vegetable oil into the pan - wait 20seconds - add yellow onion into the pan and fried 30 seconds- add carrot, green pepper and read pepper and cook them until medium well- put them out to a set dish.

2. Beef
Clean the pan or use the other pan to cook your marinade beef until medium well. Put into the other dish.

3. Udon
Cook Udon in a boiled water for 2-3mins.Make sure not over cook the Udon. Rinse the udon noodles with cold running water. Drain and set aside. 

4. Combine
Add Udon into a heated pan, then add dish 1 + 2 and Yakisoba souce to the noodles. Combine them well and fried for 2 ~ 3mins.

5. Done
Close heat and play them into serving dishes.
